Of course the up side of the paneer will always have a texture, because the twisted side of the cloth is not flat. I guess that's why it was so hard for me to find paneer in ethnic food markets--it's so easy, people who cook just make it at home themselves. I guess it might be cheaper to make it at home depending on how much milk is used.
