Its called a super saturated solution. He heats that water and adds a salt (not NaCl, a salt is any Metal that has bonded with any non metal)in a higher concentration than the solvent can dissolve under normal circumstances then slowly cools it. The action of the straw acts as a catalyst causing the salt to quickly precipitate out. 10th grade Chemistry people, come on.
