You should have said that sheet music red-out from midi files are quite inaccurate. It might work accurate for simple melodies like Tetris, but the more complex a song (e.g. piano scores ) gets the more the sheet music gets fudged. It will still sound somewhat the same but it's not always in a format to play anymore. Still its a good method to extract simple measures.

In Audacity there is a "What U Hear" option under inputs. This way you can capture the sound going through your sound card without having to degrade the sound by using speakers and a microphone.
